Feeling a little tropical today. There’s something about mangos that makes me smile. Actually, I sometimes giggle when I eat them (it’s the kid at heart coming out in me). Anyway, they remind me of the time that I lived in the Dominican Republic. Picking them right from the trees and enjoying the flavors of the tropics brings back so many memories.
At that time I didn’t realize the nutritional value of mangoes, but now I do!
Did you know this about mangos?
- 1 cup of mangoes offers 100% of your daily vitamin C recommendation in just one cup!
- It contains 12% of your daily dietary fiber.
- A mango tree can grow as tall as 100 feet!
Here are some fun facts about mangos and how to choose them. I’m not focusing on that with this post. I want to share with you a delicious recipe that is one of my favorites! Many enjoy fruit smoothies but it’s important to add in some dark green leafy vegetables to maximize the nutrients and sustain your energy with this balance.
Doesn’t this look delicious? I spoke about it here on Charlotte Today and highlighted the benefits of each ingredient. What’s more is that it is in my book on A Busy Woman’s Way to a Healthy Detox!
I hope you enjoy the recipe!
- 1 cup mango
- 1 1/4 cup pineapple
- 3 leaves kale
- 2 cups coconut water
- Juice from lime
- Blend in high speed blender until completely smooth.
